Happy (half a kilogram of chocolate in one cake) Birthday!


It was my sisters birthday this weekend and to celebrate she decided to go play paintball...which was AWESOME! In the last round we played each-man-for-himself-shoot-anyone-you-want round and I got hit a zillion times. Most of my bruises come from that round, but it was soooo fun. Surprisingly, the most pain I had the next day was my stiff leg and arm muscles from crouching behind haystacks and lifting the gun to shoot!

After the paintball we went back to our house and had cake...the most amazing cake in the world (even if I say so myself). It was a plain vanilla cake with dark chocolate ganache and raspberry filling. YUM! I don't particularly like eating cake, surprisingly enough, but this one was delicious - and very easy to make.




I simply made 4 layers of vanilla sponge with extra vanilla seeds in and then filled them with whipped dark chocolate ganache and raspberries - cake, ganach, raspberries - repeat for four layers. I used this ganache recipe and made two batches of it - it was a rather large cake. I imagine fresh raspberries would be best but I couldn't get any of those so I just used frozen ones - just make sure to completely defrost and drain them of excess liquid before putting into the cake. The sour berries perfectly compliment the ganache, it would be way too rich without the berries and the vanilla cake is a great base.

This cake is perfect for anyone who doesn't particularly enjoy the extra sweetness of buttercream icing or who LOVES chocolate - also, it's very satisfying to cut the cake and have everyone go "WOOOOOOW!"
